The Cuisine

Designed for sharing, the menu is infused with Executive Chef Cary Docherty’s trademark of refined but relaxed deliciousness with plates that cross the Mediterranean region. To accompany the cuisine, Salisterra’s striking bar curates a drink programme in collaboration with Raphael Holzer, featuring cocktails crafted with house-made ingredients including pickles, infused tinctures, and seasonal garnishes.

Cary Docherty
Executive Chef, Salisterra

Drawing from more than 20 years of culinary experience, Hong Kong-based Canadian chef, Cary Docherty is known for his culinary trademark of refined but relaxed deliciousness.

Before joining Salisterra, the Canadian chef honed his craft at celebrated restaurants in Vancouver, London and Hong Kong. A graduate of The Art Institute of New York City, he cut his teeth at the storied French restaurant, Lumière, in Vancouver. Cary then worked in London with internationally renowned chefs, such as Gordon Ramsay, Clare Smyth and Jason Atherton.

Cary’s illustrious resume includes roles at many award-winning eateries, from one-Michelin-starred Maze to three-Michelin-starred Restaurant Gordon Ramsay, beloved Chelsea bistro Foxtrot Oscar and Jason Atherton's restaurant and wine bar, Little Social.

Evening

Evening brings an abundant energy to the bar with a cocktail menu that echoes the spring and summer seasons by blending herbs and spices from the region. Adjoining the main social dining room are semi-private tables that are elevated to connect with the open kitchen as guests are presented with a specially created sharing menu that requires 48-hours advance reservation.

Bar | 6:30am until 12:00am daily. All guests must fulfil the latest Government’s COVID-19 Vaccine Pass requirement for entry.
